Apple mint (Mentha suaveolens) has green leaves, but its variegated form (Mentha suaveolens var. variegatum) has attractive, rounded leaves patterned with dark green and bright green splashes and edged in pure white. It prefers a partly shaded location so the white parts of its leaves don’t burn. Apple mint has a green-apple fragrance and subtle apple flavor. It produces pinkish-white flowers above its downy leaves in summer. It’s good for fruit dishes, jelly and is especially fragrant when used for tea.
